It is a kind of natural edible pigment obtained by purified and emulsified from tumeric pigment.The rufous liquid color is soluble in water,but insoluble in oil and absolute alcohol.At PH 2.0-7.0 the color is yellow and stable;at PH above 7.0,it is salmon pink or rufous.
